Black Bean, Nectarine & Ginger Curry
This was a treat to make. We had a glut of organic nectarines and decided to pre-soak black beans over-night, then we made a slow cooked curry with fresh organic ginger and spices and used the nectarines to sweeten. The result was a very satisfying and nutrient-dense rich dish.
Ingredients: *black beans, *onions, *thyme, *ginger, olive oil, *nectarines, *chili powder, *turmeric, *coriander, *fenugreek, *cumin, *fennel, Himalayan salt and black pepper.
