Ghee is made by boiling butter which removes the milk solids and liquids from the fat. It is completely free of the milk sugar lactose and the milk protein casein, whereas butter contains small amounts of each. For people who have allergies or sensitivities to these dairy components, ghee is the better choice. Ghee has been used in Ayurvedic medicine and Indian cooking for centuries.
Mooberry was Organic Emporium’s first supplier 10 years ago for pasture-raised dairy.
At the time Mandy Simon, founder and owner of Mooberry was the first farmer to bring free-range dairy to Jozi plates.Organic Emporium at the time was the first outlet to supply Mooberry dairy. This relationship has spanned a decade and Mooberry remains the leading and most experienced supplier of grass-fed dairy to the Jozi market.
Whilst Mooberry has grown exponentially, their principles around raising dairy cows on pasture without supplementation with growth hormones and antibiotics remains. Today the Mooberry herd has moved from their smaller beginnings in Northriding to luscious pasture situated in The Cradle.
The herd are tested regularly for TB and brucellosis to mitigate risk factors around raw dairy.
