The first of Winters citrus oranges coming through, always a joy as its a short season. Besides the pure joy of just eating a whole organic orange which is ever full of flavor, they’re also gorgeous to cook with. I love cooking chicken with olive oil, thyme, honey, fresh chili and orange juice in Winter, pasture raised pork also does well with this combination just rather use sage instead of thyme and roasting sweet potatoes with orange juice, coconut oil and then topping with black sesame seeds, also just beautiful. Fennel season is coming shortly, we’ll be getting fresh fennel from Antonia’s organic gardens, roasting fennel with olive oil, fresh orange juice, ginger and garlic and with whole quartered oranges in and lashings of black pepper is an exquisite pleasure.
Topping that with a good hard grated cheese or ground cashew nuts if you don’t do dairy, works wonders.
