This bake is delicious and the sauce is so versatile, it can be used on roasted vegetables or lamb.

Instructions
  1. Pre-head over to 180 degrees celcius
  2. Place the chicken pieces in a baking dish, drizzle over the olive oil, sprinkle over some rock or sea salt and some cracked black pepper.
  3. Add the orange juice, bacon, tea with honey, olives, garlic and courgettes to the baking dish.
  4. Coat the chicken pieces in this sauce and pop into the oven for 30 minutes. Remove at 15 minutes to turn the chicken pieces over.
  5. After 30 minutes, remove from the oven and add the cream to the baking dish, stir through, turn the chicken pieces back over and bake for another 15 minutes.
  6. Remove from the oven. Decant the sauce into a pot on the stove-top and simmer to reduce.
  7. This sauce is incredible and thickens with reducing.
  8. While your sauce is reducing – assemble your greens onto a beautiful platter.
  9. Place the chicken pieces over the greens and grate your orange zest over the top.
  10. Remove the reduced sauce and spoon it over the chicken pieces.
  11. Toss over the sesame seeds and the chunks of white French goats cheese.
