Instructions
  1. Crank the oven up after you have removed the roast to rest from 150 to 200 degrees C.
  2. Place the pumpkin pieces, orange juice, cranberries, olive oil and butter into a baking dish and pop into the oven.
  3. After 40 minutes the pumpkin should be ready and start showing signs of caramelisation on the outside - if the fork pierces the pumpkin easily - it’s ready.
  4. Remove and plate together - toss over the sesame seeds and rocket to serve.
Recipe Notes

This is an easy to put together salad that utilizes the organic pumpkins which are in season in winter and is an excellent salad to go with a nourishing roast.
