Twice baked sweet potatoes with goats cheese, asparagus and citrus pepper

The quantities for this recipe don’t need to be exact, play around with what works best and for the amount of people you are serving.

We currently have amazing fairtrade wild sweet potatoes that are such uneven sizes that it is hard to give an exact quantity for the recipe. Any amount can be done for this recipe.

Any cheese of your choice would work well for this recipe. My preference would be for any of the goats cheese from Beatrix Mountain Goat farm which would complement the flavours well.

Camembert and Brie would also be great in this dish. Preferably the raw milk ones from Le Petite France for the extra probiotics that aren’t in the pasteurized milk options.

Instructions
Sweet potatoe preparation
  1. Pre-heat oven to 180 degrees Celcius.
  2. Wash each sweet potato and then dry with a towel or kitchen paper.
  3. Cut slits into the sweet potatoes lengthwise so that you have a series of slits that cut about 3/4 into the depth of the potato.
  4. Drizzle olive oil and sea salt over the potatoes. Then rub it into the outside of the potatoes.
  5. Place in the oven and bake for 50 minutes. Turn once during the time for even cooking.
  6. Remove from the oven.
  7. Cut cheese of choice into slithers that will fit into the slits in the sweet potato.
  8. Insert cheese into the slits in the potatoes.
  9. Rub some butter over the top of the sweet potato.
  10. Crack over some pepper and put them back in the oven for another 20 minutes.
Asparagus preparation
  1. Being some shallow salted water to the boil and when boiling toss in the asparagus.
  2. Remove after 4 minutes or till al dente - still firm.
Assembling the dish
  1. Remove the sweet potato dish from the oven. Place the asparagus around them on the tray turning them in the juices on the baking sheet or tray from you sweet potatoes.
  2. Pop back into the oven for 5 minutes to heat.
  3. Remove - serve on the tray with the asparagus dotted around the sweet potatoes.
  4. Crack over some citrus pepper and some more salt and the juice of half a lemon or organic orange.
  5. Toss over the parsley and serve.
Recipe Notes

This dish is versatile, it would be delicious with roast chicken, lamb dishes or other salads such as the beetroot salad.
